Chorizo Con Huevo
(Mexican Sausage)
6 servings: 1/2 cup per serving
Diabetic Exchanges: 2 Meat, Medium Fat, & 1 Fat
1-pound sausage 2 hot peppers, chopped (optional) 1-cup onions (chopped) 6 eggs 2 hot peppers, chopped (optional)
Remove the casing or wrapping from the sausage. Place the sausage in a large skillet and allow to cook over a medium flame for 3 minutes. Drain fat from the sausage and add onion, tomato, and hot peppers. Cook for 1 minute. Add eggs and scramble over medium heat until eggs are firm but not dry.
