Calabacitas Con Puerco
(Mexican Squash with pork)
In large stew pot, heat oil and brown cubed pork. Add onion and garlic.
Stir until vegetables are sauteed. Add squash and cook 10 minutes. Add salt,
pepper and cumin. Add tomatoes and corn. Add chicken broth if the mixture
needs liquid. Cook until squash is done (about 45 minutes). This may be
made with chicken pieces or a mixture of pork and chicken.
