5-6 medium sweet potatoes (enough to make 3
cups after cooking)
1 cup sugar
2 eggs, beaten
1 tsp. vanilla
2 tbsp. flour
1/4 cup milk
1/2 cup melted margarine
Topping:
1/3 cup flour
1 cup firmly packed brown sugar
1/3 cup melted margarine
1 cup finely chopped pecans
Bake potatoes in an oven (approximately 45
minutes at 350 degrees) or microwave oven (3 to 5 minutes each)
until done, then mash. Mix together all the casserole ingredients
and place in a 1 1/2 quart casserole dish. In a separate mixing
bowl combine the topping ingredients and mix together until
the texture is crumbly. Pour the topping mixture over the casserole.
Bake at 350 degrees for 30 minutes.
Yield: 6 servings.
