1 1/2 lbs. lean pork loin cut into 1 inch cubes
1 tbsp. seasoned pepper salt
Optional: peppers, onions and mushroom pieces
GLAZE:
1 cup jelled cranberry
2 tbsp. white corn syrup
2 tbsp. lemon juice
2 tbsp. red wine vinegar
1/2 tsp. coarse ground black pepper
Simmer all glaze ingredients in a heavy sauce
pan until thickened. While glaze is simmering, alternate seasoned
pork cubes on skewer with your choice of peppers, onion and
mushroom pieces. Grill kabobs on gas grill at medium heat for
15-20 minutes glazing the last 5 minutes with cranberry mixture.
Serve while hot, garnish as desired.
Yield: 6 servings.
