4 cups chopped cooked chicken
4 cups chicken broth
1 cup diced Velveeta light cheese
1 large onion, chopped
1 1/2 cups chopped frozen broccoli
1 cup frozen corn
4 cups cracker crumbs
2 eggs, beaten
1 10 3/4-ounce can 99% fat free cream of mushroom soup
1/2 tsp. pepper
In a 13 X 9 baking dish, combine all of the
above ingredients reserving one cup cracker crumbs. Sprinkle
remaining cracker crumbs on the top of the mixture. Bake uncovered
in a 350 degree oven for 45 minutes.
Yield: 8 servings.
