4 to 4 1/2 lb. beef brisket
1/2 tsp. thyme
1 large onion, chopped
1/2 tsp. whole cloves
2 bay leaves
1 small dried Chipotle pepper, chopped
2 cloves garlic
6 sprigs parsley 1 tsp. peppercorns
3 cups beef broth
Salt
1 tsp. prepared horseradish
1 tbsp. Dijon mustard
Mix all ingredients with broth. Cover tightly
with foil and bake 325 degrees for 3 1/2 - 4 hours. Slice and
place on platter, pouring juices over it.
