MOCK STRAWBERRY PRESERVES
2 quarts peeled, sliced figs
6 cups sugar
2 pkg. (6 oz.) or 4 pkg. (3 oz.)
strawberry-flavored gelatin
Combine in large saucepan and let stand until syrup forms. Bring
to boil over full gas flame. Continue boiling for 20 minutes.
Add 1 package (1 3/4 oz) powdered fruit pectin. Continue boiling
for 2 minutes. Pour into sterilized jars. Seal immediately.
There are two commercial forms of fruit pectin:
liquid and powder. Powdered pectin won't dissolve in high sugar
concentration and must be added to the fruit before the sugar.
Liquid fruit pectin, on the other hand must be added last of
all, after the fruit and sugar have boiled. These can not be
used interchangeably.
