ALMOND AND FIG FILLING
3/4 cup almonds
1/2 cup sugar
1 tbsp. grated orange rind
1/2 cup orange juice
2 tbsp. all purpose flour
1/2 cup water
1 1/2 cups chopped or ground dried figs
1/8 tsp. salt
1/2 tsp. vanilla
Blanch, sliver, then toast almonds. Combine sugar, grated orange
rind, orange juice, flour, water, chopped or ground dried figs,
and salt. Simmer these ingredients for 5 minutes. Stir constantly.
Add the almonds and vanilla.
Makes about 1 1/2 cups.
