Bread:
1 stick butter
4 cups milk
3 tbsp. honey
1 tsp. salt
6-8 cups flour
2 tbsp. yeast
To prepare the bread, melt
the butter in a saucepan, add the milk, honey, and salt and
heat to 115 degrees. Add three cups of flour and mix well, add
three more cups of flour and the yeast and mix. Add more flour
if necessary to achieve correct consistency. Turn out on floured
surface and knead for 2-3 minutes. Put dough in oiled bowl and
let rise until double in size. Remove dough from bowl and knead.
Divide dough in half and make loaves in desired shapes. Let
rise at room temperature and then bake at 400 degrees for 20-30
minutes or until golden brown.
Yield: 2 loaves
Sandwich:
1/4 cup lowfat mayonnaise
2 tbsp. mustard
10-ounce pkg. assorted lunch meat
Lowfat assorted cheese slices (Swiss, Cheddar, Colby)
12 slices bread and butter pickles
1 medium tomato, sliced
Lettuce
Let bread cool and then
slice in half lengthwise and spread with mayonnaise and mustard.
Layer lunch meat, cheese, pickles, tomatoes and lettuce on bread
half spread with mustard. Top with remaining bread half, slice,
and serve.
Yield: 6 servings.
