Tex-Mex Beef Fajitas
- 2/3 cup prepared salsa
- 2 tablespoons lime juice
- 1/2 teaspoon chile powder
- 2 cloves garlic, minced
- 1 pound lean beef, cut into strips
- 1 Texas SpringSweet and 1015 SuperSweet Onion sliced and separated into rings
- 1 bell pepper, cut into small strips
- 2 tablespoons oil
- 8 6-inch flour tortillas
- Guacamole
- Sour Cream
- Salsa
- Cilantro
- Shredded cheddar or jack cheese
Combine salsa, lime juice, chile powder and garlic in a medium bowl; mix well. Add beef strips; let marinate several hours or overnight. Heat 1 tablespoon oil in a large skillet; add Texas SpringSweet and 1015 SuperSweet Onion and cook until softened. Add bell pepper and cook several minutes more; remove from skillet and set aside. Add remaining oil to skillet and cook beef until lightly browned, 3 to 4 minutes stirring frequently. Add vegetables back to skillet and cook until hot. Warm tortillas in oven and place toppings in separate bowls to serve.
