Texas SpringSweet Onion Rings
Make these crunchy, seasoned onion rings for family and friends. They'll be glad you did.
2 large (14 to 16 ounces each) Texas SpringSweet or Texas 1015 SuperSweet Onions
2 cups buttermilk
1 cup seasoned bread crumbs
1 cup cornmeal
1 teaspoon seasoned salt or garlic salt
1/4 teaspoon chile powder, optional
Oil for deep-fat frying
Grated Parmesan cheese

Slice onions into 1/4-inch slices and separate into rings. Place buttermilk in medium bowl and drop in onion rings; let stand 30 minutes. Meanwhile, combine crumbs, cornmeal and desired seasonings in medium bowl. Lift onion rings out of buttermilk a few at a time and drop into crumb mixture, turning to coat. Carefully place rings back in buttermilk and dip in crumbs again, coating with as much crumb mixture as possible. Deep-fry in hot oil heated to 375 degrees F for about 3 minutes, or until golden brown. Drain on paper towels. Repeat with remaining onions. Transfer to a basket or platter and top with Parmesan cheese.

Makes 4 to 6 servings.
